Blueberry Puffy Pancakes
Recipe from the kitchen of
2 cups SweetStacks Gourmet Pancake mix (1 full batch)
Aebleskiver Pan (buy at www.aebleskiver.com)
Make gourmet pancake batter using the SweetStacks gourmet pancake mix (use 1 full batch directions)
Heat aebleskiver pan at low heat. Put about 1 tablespoon of vegetable oil in the bottom of each aebleskiver pan cup or you can spray with non-stick cooking spray. Pour batter into each cup in the aebleskiver pan. Place 2-3 blueberries in and push into the batter in each cup. As soon as the batter gets bubbly around the edge, turn the puffy pancakes quickly with knitting needle or a fork will work. Continue cooking and turning the puffy pancakes to ensure the batter is completely cooked and to keep them from burning.
Once completely cooked remove from pan and cool. Add powdered sugar to top and enjoy!
Makes approximately 8 puffy pancakes.
Variations: Substitute blueberries with any other fruit, i.e. strawberries, crushed pineapple, or bananas. Our favorite is crushed pineapple! YUM!
